Re: EF-S lens compatibility with EF-mount adapter (Canon lenses via Metabones adapter to Sony a7s ii. Can't answer most of that but can tell you that EF-S lenses will not be a good choice in most cases because it will look like you are shooting through a pipe.

The EOS R is a 30 megapixel (6720 x 4480) Full Frame camera. If you use an adapter to mount an APS-C crop lens like the EF-S 10-22, the camera will automatically turn into a 11.6 megapixel (4176x2784) crop camera. It will not give you a Full Frame 10-22mm field of view.
