If a drive has failed in a fault-tolerant (RAID 1, RAID 10, RAID 5, or RAID 6) array, a vulnerability window opens. If another drive fails during this vulnerability window, the data is lost.

For our next server, I'm planning to configure its storage to be in RAID 10 configuration. Not only that, I'd like the system to have a hot spare. However, because servers seem to only come with an even number of bays, and since RAID 10 requires we add drives in pairs, one hot spare will cause us to end up with one empty bay in the server.

Generally, I would say that no hot spares would be needed. Mirrored RAID is insanely reliable and rebuilds very quickly and does not experience the increases drive failure risks of parity RAID. Also the risks of RAID 10 do not grow exponentially like parity RAID but linearly. Each mirrored set is discrete.
