Assuming it is Emoji 1.68.1 as it is compatible with the current release version of Thunderbird (68) then I suggest you use the view menu to turn on the promised sidebar. Note, I just went to the add-on page for instructions. I have never used the add-on nor do I have a use for extended Emoji's so I am only repeating what the page says.
