You can use a raw device mapping (RDM) to store virtual machine data directly on a SAN LUN, instead of storing it in a virtual disk file. You can add an RDM disk to an existing virtual machine, or you can add the disk when you customize the virtual machine hardware during the virtual machine creation process.

When I go in ESXi to create a new VM from existing virtual disk, and browse to the disk in the datastore, it is not visible (using the compatible disk mask that VMWare uses .vmdk,.raw, etc).ESXi claims to support raw file format for virtual disks, what gives?

ESXi does not support any kind of software RAID. If you really want to abstract the storage, you'll need to use iSCSI or something. You could pass through the raw disks to a FreeNAS VM or something, but then you'll have to have that VM booted and running before you can boot any VMs running on it.
