Because both the server and the client are behind their own NATs, though, my understanding is that I need to use STUN. But when I add the STUN server to the FreePBX SIP config, save, and “Apply Config,” the local SIP clients stop working. Remove the STUN server, save, and “Apply Config,” and the local SIP clients start working immediately.

In most cases, the STUN server is a free service run by an organization with which you have no business relationship, so no support is available. Also, note that older Polycom phones don’t even support STUN.

Though on tryit the STUN server is forced so you may be getting blocked by something else. Furthermore the STUN server isn’t actually defined anywhere in the jssip tutorials or documentation, You have to dig through their codebase on tryit to actually see what they are doing, which is why FreePBX does this as well (otherwise you’d have issues)
