I'm going to post my own answer which is basically based on data I got from other XenServer operators: 6.0 has had issues and many waited until 6.0.2 before moving. OVS is apparently solid in 6.0.2 but was frail in 6.0. So I'm unlucky and just now seeing this probably due to an increase of load. 6.2 has been reported as working solidly.
