Aperture tethered shooting could previously be achieved by using Sony Remote Camera Control with Aperture Hot Folder. However Mac os10.6 has broken Sony Remote Software which means there is no method that I am aware of of using tethering in 10.6.

Until Apple reverse engineers the Canon software (doubtful), Canon goes back to the industry standard protocol (doubtful) or Canon gives Apple access to their code - it is more than likely Canon cameras will not be tethered to Aperture.
