Ive had a windows phone 7 (omnia 7) for a few months now and everything works brilliantly, the 'Mango' update is brilliant too, just triple check your settings, im also sure HTC have a network settings app on the marketplace with giffgaff settings built in, try downloading it from your wifi see if that works
