As @SDR says you can actually use any router you like now and bin the Sky router if thats what you want to do. Alternatively, to mimic modem only mode on the Sky router, you'll want to turn off WiFi & DHCP and put the IP address of your secondary router in the DMZ of the Sky router.

Sky are notorious for making it difficult to use your own equipment (they are the most difficult of any UK ISP). If it was any other provider, I would have recommended that you get a ADSL or VDSL (for fibre) modem and to plug it into the WAN port of your router - you can use the username/password your provider has told you to use, and away you go.
